Here's the kicker though, you have to be careful with the probes. They can easily get damaged, especially if they get water in them where the cord goes into the probe. Replacement probes go for $18-20.

I use mine all the time cooking in the house as well as with my smoker... for chickens, turkeys, roasts, meatloaf, etc. I'll tell you, there's no better way to get a perfectly cooked turkey on Thanksgiving... you always pull the bird out at the exact right time!

I just use this one. Has 2 probes, and so far has worked very well. I'm sure it's nice having bluetooth ones to your phone, but for me this one is more than enough. You can set high and low temps and the signal reaches anywhere in my house.

Reverse searing is my favorite:

You're going to need a probe thermometer at the very least, to monitor the internal temperature of your steak. If you're grilling it, which I highly recommend, you should have a probe thermometer for your grill as well. Something like this is perfect.

Anyway, season your steak however you like while you get your grill up to temperature. For best results, I suggest a charcoal grill or smoker and some mild wood chips for a subtle smoky flavor, although that isn't 100% necessary.

Set up your grill for indirect heat and let it get to about 225-250°F (107-121°C) before you begin. Make sure your thermometer probe that's in the steak is in the middle for accuracy, and put your steak on the grill.

Let your steak get to about 10°F below whatever doneness you like and then take it off the grill. Now we will sear the steak. You can do this however you like, depending on what equipment you have available to you. Ideally, you'll have a flat surface like a cast iron skillet or a flat-top griddle, but you can use your grill grates as well. Whichever you decide to use, get it as hot as you can. Like, screaming hot. When your cooking surface is sufficiently hot, throw your steak on there for 60-90 seconds per side. This is how you'll get the iconic "crust" on the steak.

When you're done searing, you're ready to eat! Bon appetit!

I also had a fireboard, which is a really fancy wifi thermometer that can even drive a fan to control the smoker heat on a charcoal / wood smoker. Amazing thermometer, but it got wet and died on me.

Lots of good suggestions here. I second getting a good knife sharpening stone. Start using it with cheap knives you pick up at a thrift shop until you get the hang of sharpening, then use it on your better household knives.

Remote thermometer. Great for roasting or grilling bigger cuts of meat. You can go about your day or visit with guests without worrying about what’s going on with your meat:

I took it to 198° and let it rest for over an hour, so I’m sure it was over 200° when all was done. I thought about maybe taking it over 200° before pulling it off but it was getting late and I was tired, plus I knew a couple degrees wouldn’t have made a noticeable difference. The biggest change I made was getting a good wireless thermometer. I purchased this on Black Friday for half off, Thermometer and it’s made a world of difference for me. Being able to watch the temp fluctuate has helped me immensely with managing a steady low and slow process. Good luck!

I just received the smoker as a gift two months ago. I've only done ribs and chicken to this point.

The most challenging thing is definitely fire management. I'm still working/learning to get it right. One thing that I did to help was buy this thermometer so I could track the temp at the grate after I walk away from the smoker.

There’s nothing really wrong with the Traeger probes themselves. They are a bit slow.

Myself I got a wireless probe like this one which I can alert me once it hits specific temps. They make them with multiple probes (2-4) which is useful if you’re doing several things at once on the grill. There are even WiFi enabled ones that can message you with alerts. Very handy.

But a rapid read is also useful to have too.

This one is what I have and it works well, there's also a single probe version that's a bit cheaper.

One note to add when I say preheat the pan to sear the steak in, it should be starting to smoke. Usually about 5 minutes on high for a cast iron skillet. A lot faster with a nice stainless steel pan. A good test is to get your hand wet and flick some water in the pan and if it sizzles and evaporates immediately then it should be hot enough.

And finally always let the steak rest for about 10 minutes before cutting into it.

Wireless Freezer Thermometers with Remote Alarm - Advice?

Does anyone have any recommendations on a wireless/remote freezer thermometers with alarm?

Here's the story...

I have a chest freezer that's out in the garage, and it has a thermometer with an alarm that has served me well, but if there's an event where the alarm goes off, I won't hear it. This is what I have now: CDN TA20 Audio Visual Refrigerator Freezer Alarm. It's great, except, again, I won't hear the alarm.

There are these styles, but the design of that AMIR one is that the sensor drops into the freezer and is run by AA batteries. That presents two problems; over time, I fear that the humidity in the freezer will affect the batteries. The other worry is that the wireless may not penetrate a well-insulated freezer.

I'm looking for a thermometer/alarm that has a probe that goes inside the freezer, and attaches to the wireless sensor which in turn, connects to a monitor. I have this one for grilling (and it works great), but it's not intended for freezing temps, as the lowest it will go is 32 deg F. If I could find something like this with a temperature range suited for a -20 deg Celsius freezer, I'd be set.

Any thoughts?

You want a probe thermometer like this one (first one on google research please). One goes in the meat one goes in the smoke chamber close to the meat. These can then have setting/ warnings, etc.

Another tip, A L W A Y S cover the water pan in foil before smoking. Makes cleanup so much easier.

I've had mine for 6 months. It's been great. I've done ribs, pork butts, briskets, whole chickens, and chicken wings. Everything has turned out awesome.

Yes and no. Traditional non-electronic thermometer come in different form factors and have temp scales limited to the range based on their expected usage.

Electronic probe thermometers blur that somewhat.
For example this product works well for many things: Temperature Range: 32°F to 572°F or 0°C to 300°C As does this Taylor pocket thermometer. You just need to read the specs.

The perk of this is range. It will be good across the yard and to the other side of the house through walls.

Bluetooth on the other hand has a more limited range. So depending on the layout of your house it could be an issue. Sitting next to the smoker with a beer though it won't really matter.

Apparently the inkbird is on a lightning deal for the next hour. Act fast! It's BT, but also has four total probes.

I got it for $80 just a few months ago; not sure why the jump in price. I've done pulled pork, brisket, Bone in Turkey breast, and salmon. It's hard to control the temperature, but I've had good luck just cranking it and letting it go. A dual remote thermometer setup has been key for me. It lets me know when to pull meat off and if the smoking wood catches fire. I use the TP20, but I found it on ebay for $42 shipped:

Sounds like you're on the right track! A thermometer is a grillers best friend. 2 things I wouldn't skimp on is a high quality instant read thermometer and a good pair of gloves. I'll list a few things with links that I personally have and love, do with it what you will.
