I definitely agree that aesthetically the AirPods are great, but they’re generally not much more discrete because they’re white. The size of the case is also a huge plus, but I was so disappointed when I tried them that it was easy to overlook lol.
The only think I find iffy about the Sony’s is that with the fat earbuds, they’re really comfortable but I find that they slide out of my ear every hour or so when I’m up and moving. Other than that I love them, so keep that in mind for exercise and stuff.

I'd suggest looking at the Sony 1000 XM3 Earbuds.
The newer ones go for around $220, while you can find Amazon Renewed ones with warranty for around $120. Amazing value as you get active noise cancellation at this price!

These Sony earbuds are the best quality around $100 imo (Amazon warehouse pricing). I have Tozo T6 Bluetooth earbuds and I'm reasonably happy, especially at their price point.

Anyone have any experience with the Sony WF-1000XM3 for riding, specifically with half helmets? If you don't have specific experience then if you have any opinion on how well they would function for riding would be helpful too. I ride an '05 Suzuki Boulevard c90t if that helps.

I would recommend the step up wf1000xm3s they aren’t officially waterproof but I sweat a lot and even accidentally dropped them in a pool and they still work great and sound amazing.

Looking for noise canceling airbuds to use on airplane, does that even work?
I've been using a headset on plane rides to cancel out the noise. It doesn't cancel out everything, but the difference is definitely noticeable. Downside, it's a huge bulky thing I gotta pack in my carry-on that I don't use when I get to my destination. Would earbuds be a good replacement?
I was looking at this CNET article on the best noise cancelling earbuds.
Assuming price is no object, the Sony ones in the article repeatedly mention that their noise cancellation is industry leading.
But I know better than to trust a marketing team. How do the people on this sub feel about noise cancelling earbuds, and which ones should I get?

For something right at your budget, the galaxy buds plus. Though for the best sound quality in a Bluetooth earbud, as well as a larger size, you can check out the Sony WF-1000 XM3 if you're willing to go a bit over budget.
As an aside, have you ever considered bone conductors like Aftershockz? They would be definitely easier to handle with your shaking, there's no need to replace tips either. The sound quality isn't going to be in as good of course, but I got a pair of Aftershockz Aeropex myself and I absolutely love them if it for no other reason than practically.

I'd say Sony WH-1000XM4 for all that matters to you, but it doesn't cover the discreet part, for they are quite bulky headphones... In that case, maybe the WF-1000XM3 are the best option...

I am not an authority into cancellation, but I do find it pretty effective for background noise - especially the kind of muffled noises that might be coming from outside/another apartment. I guess what I am saying is that it's worth trying out, especially since they are on sale and if it isn't what you want its very easy to return them over Amazon and get something else.
All that said, what are you using them for? Gaming over bluetooth is generally not doable and if you plan on using these for gaming I would disregard everything else I just said.

These names are understandably confusing. But most people just refer to them as the Sony XM3, and use context or IEM/Over ear to distinguish.

It will be hard to find good noise cancelling for that price. The Sony WF-1000XM3 (different than the WH model that you referenced) is on sale right now for $168... they're top of the line earbuds.
If you're willing to sacrifice noise cancelling you'll have a lot more options.
Does it need to be true wireless, or would you consider regular wireless (a wire connects one earbud to the other, but the earbuds are still wireless from the phone). Bose has the best comfort in my opinion which is great for extended use and not falling out of the ear... their SoundSport is on sale for $89 right now. You also tend to get better battery life with these types of models (versus true wireless).
For your father, I'd recommend getting a decent bluetooth speaker that can be recharged each night and brought into the car, rather than earbuds... just from a safety perspective it's not good to wear headphones / earbuds while driving.

For wired earbuds I'm a big fan of Symphonized NRG 3.0. For being so inexpensive they sound great and they go on Amazon's lightning deals every now and then for around $17 USD.
Foe bluetooth, I recently bought these Sony WF-1000XM3's.
I'm really liking them. They work great on my S9+ and my Windows 10 laptop for zoom calls, etc.

Lacks a water/sweat resistance rating, so if you’re looking to exercise with them it may be a deal breaker.

JLab Epic Air Sport True Wireless Earbuds - $150 USD - 10 hour battery life! IP66 water/sweat resistance rating (highest rating available). Touch controls, transparency mode (like AirPods Pro), no ANC but they come with foam tips to make a great seal for passive sound isolation. These are geared towards exercise so they have those earhooks like the PowerBeats Pro (imo JLab’s beat the Beats in price and features). If you don’t like the hooks that may be a deal breaker. These are my first choice for under $200 USD.

BONUS: Sennheiser Momentum True Wireless 2 - $300 - Listed these as bonus due to the price BUT, if you could swing the extra money, these are worth it imo. BEST sound quality of ANY wireless earbuds hands down. If you know Sennheiser... I need not say anything more. 7 hrs battery life. Touch controls, IPX4 sweat and water resistant, ANC and Transparency Mode. I know I said the Sony’s have the best in class ANC but the Sennheiser’s rival that. The Sony’s are the best at blocking out any and all noise coming in but at the expense of a little bit of sound quality, sounds a little muffled, like the AirPods pro do when ANC is on. The Sennheiser’s ANC blocks 90-95% of the Sony’s do but WITHOUT a change in sound quality whatsoever. I’d rather take the Sennheiser’s and block the rest of the 5% of noise out with some foam tips and keep my sound quality.

If you have the money Sennheiser’s will do everything the AirPods Pro will do for longer and with better quality, sound and ANC wise. Only $50 USD more than them.
If you don’t mind a “gym” earbud, the JLab’s are the best for the money.
Sony’s are good if you really want the ANC and won’t be using them to work out. At the end of your budget though, most expensive.
Anker’s are good for if you really for some reason can’t stand the earhook of the JLab’s and want something cheaper than the Sony’s. For the price I haven’t found anything better (aside from the JLab’s) in a wireless earbud.
