At least a 1TB if not 2, I would also look at an SSD external, much cheaper then internal and much faster then a thumb drive, we actually run Windows OS off of them.

I had an older SSD card similar to the one in this link and it works great. The one thing i noticed recently is that area in the center console can get warm in the middle of the day so make the device can handle some heat.

Sorry I haven’t used this account in awhile. Hope my advice isn’t too late.
The cheapest priced 16-inch MacBook Pro has a 6-core CPU. That’s more than fast enough for graphic design work. The main reason to upgrade the cpu to 8-core is for when the software can take advantage of multi core processing. So final cut video rendering, that kind of thing. And mainly if you’re editing videos all day would that upgrade really be helpful. But for graphic design, 6-core is beyond sufficient. I wouldn’t recommend upgrading the CPU. It’s throwing money away unless you know you’re doing multi core processing tasks.
Regarding RAM, 16GB is enough, or standard, but I recommend 32GB because you may occasionally do large projects, with multiple Adobe apps open, and you don’t want to be experiencing any slow down due to swapping. I think 64GB is a waste of money unless you’re doing Pro video, cgi animation, that kind of thing. 32GB is the sweet spot. 16GB is fine if you’re only doing print work.
Regarding storage, I recommend 512GB, which is the default.
So I have Dropbox setup. All my current project files are saved on Dropbox (not the desktop, not anywhere else but Dropbox). So if I lose my laptop, everything is up to date on Dropbox.
After I complete a project, I package all my client files and then move them to an External SSD. I recommend this.
I then own a second SSD and clone the first. Only this time I keep that clone offsite (eg parents house), in case there’s a disaster or break in and I lose my first SSD.
So you can see, a backup strategy for professional work is paramount. How much storage you have on you, in your laptop, is less important. Video editors could use a laptop with 2-4TB. Graphic designers don’t need more than 256GB. So 512GB is sufficient. But get what you feel you need. If you want to partition Windows Bootcamp for playing games, then I do recommend upgrading to 1TB and partitioning 256GB to Windows, since modern AAA games are taking up like an average of 40-70GB each.

Edit: forgot GPU. The 5300M is sufficient. Design doesn’t use the GPU much. Until you’re doing video (eg Final Cut) or CGI (eg Blender). I’m not sure how good Adobe After Effects is about GPU compute, but I imagine it is. So in those cases, the faster the GPU the better. But it seems GPU won’t affect you much.
But upgrade if you wanna play games.
And I repeat, upgrading components for video editing isn’t necessarily smart money spending until you’re doing a lot of video editing. Upgrading components to speed up video editing by 20-50% doesn’t matter if you’re exporting video once a week. So I wouldn’t let the possible future of video editing dictate what you buy today. The default 16-inch is beyond amazing for video editing in Final Cut Pro.
Conclusion: I recommend the default 16-inch, but upgrading to 32GB RAM. Every other upgrade isn’t necessary, but nice if you have the money. I would just prefer you spend extra budget on backup drives, software, Apple Care+, and maybe an iPad Pro. Maybe a large retina external display.
Think: what’s going to make my work better? Getting a super fast GPU isn’t going to help my work. Getting the most expensive 8-core CPU isn’t going to help my work. Getting a super large retina external display would. Getting an iPad with Apple Pencil for procreate and sketching ideas would. Think in those terms, is how I try to live and how I recommend my friends and colleagues spend their money.

I’m currently on the market for a SSD for my Raspberry Pi 8gig I plan to use for staking. Reading some of the latest reviews on Amazon lead me to believe the Samsung T5 may not be the best option? I am planning to add an external SSD drive to my MBP16, install Windows on it and play some simple games from it (Portal 2, Anno 1800, etc.).
I researched the topic and it seems the following drives seem to be decent:
Any known issues with the above mentioned drives?
Are the first two enough performance-wise or the last drive that caps at 1GB/s instead of \~500MB/s like the first ones will be a substantial improvement (I doubt it would).
Any other issues I should be aware of? I know that with Catalina I can get crashes if I'd leave the drive connected.

Running on SSD simply means purchasing an external SSD hard drive, and downloading your games to it. SSDs vary and your PC may not be equipped to handle an SSD at optimal speed. I use this one:

I have a base model 2017 MacBook Pro 15", probably similar to yours, with an eGPU set up similar to your requirements above. (the only difference is that I have 3 screens) Here are my recommendations:
eGPU Enclosure
Get the Razer Core X Chroma, it's one of the best eGPU enclosures for MacBook Pros! I'm currently using one and I love it. It has 4 USB Ports, Ethernet, and it can power/charge your MacBook Pro. I bought mine off of r/hardwareswap, I highly recommend you check out that subreddit before eBay/Amazon (r/hardwareswap doesn't have tax too). For example, this user is selling his Razer Core X Chroma for $300 shipped. Notice: If you do get an eGPU with USB Ports, it will hinder performance a little. (The regular Razer Core X doesn't have USB ports)
GPU
As you probably know already, we Mac users are restricted to AMD GPUs. (Nvidia GPUs are unsupported in MacOS but are supported in Windows) I have upgraded from a Radeon RX 580 ($120-$150* used) to a Vega 64 ($250-$270*), which I am currently using. With a budget like yours I highly suggest getting a Radeon VII (\~$450*), AMD's newest & most powerful consumer-grade GPU.
External SSD / Bootcamp
Now, I know you didn't mention this but I thought I would throw this in here. I don't know how much storage your MBP has but I would suggest investing in an External SSD for Windows and gaming (I'm currently using a 512gig External SSD made by Samsung). This may not be needed for you.
As for gaming in Windows, please don't use Parallels. You can either partition your current SSD for Bootcamp/Windows or you can install Windows onto an External SSD with Parallels (you can use the trial version to do this). I used this guide to install Windows 10 on my External SSD. To use your eGPU in Windows, you need to install custom GPU Drivers from bootcampdrivers.com before you plug in your eGPU into your MBP running Windows 10 for the first time. Also for Windows 10, you will need to buy a license key to activate windows. Check out r/redditbay for cheap prices, that's where I got mine.

Monitors - Get a FREESYNC compatible one(s)!!!
I agree with u/Prequalified, get two monitors instead of an ultrawide. I'm currently using a 2-Year-Old LG 27UD88-W 27" 4K 60Hz for my main monitor which is suffering from edge discoloration and burn-in. Feel free to read my review, here. Because of my experience with LG, I would avoid using their monitors.
I'm not going to lie, there are a lot of monitors on the market right now. Choosing one can be very hard, depending on what you want to use it for. Do you prefer video/picture quality over refresh rate? Or do you prefer refresh rate over video quality? If you prefer a better image/video quality, I would look for two 4K 60Hz Monitors (something like this**). If you prefer refresh rate over image/video quality, I would look for two 1440p 144Hz Monitors (something like this**).
Depending on how much you have spent on everything else besides your monitors, you might be able to have your cake and eat it too; but only with one monitor. There are some 4K 144Hz monitors out there that cost less than $1,000.

**I've only done a basic Amazon search to find these. I highly suggest you do your own research. The nice thing with the Dell Monitor (or any other monitor with a built-in USB Hub like the Dell's) is if you decide to use an eGPU Enclosure w/out USB Ports, you can one or both of the monitors (daisy chain them) as your USB Hub.
