I got a pound of SAF on amazon for $10. Ordered on Friday. Arrived 2 days ago. Packaged 4/20, expires 4/22. Started a no-knead dough last night and it rose like a champ.

If you can’t find any in your stores, amazon still has 16 ounce packs in stock for $12. though I can’t speak to the quality. - that’s about enough for 21 loads of bread using my recipe, which should be more than enough to last you until your stores restock.

Their yeast isn’t special. You can just get yeast from amazon. Right now KA is taking forever and out of most things other than basic bread flour and AP. You will have better luck checking supermarkets.

I work in a bakery. We use SAF Instant Yeast in all of our yeast breads, the same yeast that is commonly available to home bakers. You absolutely do not need to activate yeast in warm water in order to get your dough to rise.

I'm not sure where you're located, but, if there were to be a perfect time to try to talk your way into a Restaurant Depot, I would think this is it. I haven't been in a couple weeks, but I'm confident that they still have either bread flour or high gluten- both would work beautifully for this style of pizza.

Are you looking at the BellaRise instant yeast? I don't know that brand, and there aren't many reviews. I would get SAF. It's a well-known and popular brand, and it's actually cheaper. There are thousands of reviews on Amazon, but you can also research it elsewhere online.

For people who are having trouble finding yeast, amazon has 1 pound packages of Saf-Instant Red yeast for around $10-$11. Yeah, that's like twice the old price, but it's still cheaper than the above (~$0.70/oz vs the above $1.15-$1.16/oz). Put the excess in the freezer, and it should keep for well over a year.
However:

Not OP but I make my own pizza dough and pizzas often.
Olive oil is for flavor. You add after cooking because your oven should be piping hot and the oil would just burn off.
Steel is better than stone because it retains more energy / heat. I leave my oven on for an hour with the steel in it at the highest setting to cook at the hottest temp. My oven goes to 550 and I put the pizza in for 6 minutes
Drying the mozzarella makes it less sloppy. I don’t mind the grease on my salami and pepperonis though
I would home make both as they are pretty simple to make and cheap but I guess dough as you can have more flexibility with the style you want. But for my sauce I legit use a blender and just pulse on the lowest setting San Marzano tomatoes, oregano, chili flakes, garlic, olive oil and sauce, add to the pizza and then it cooks in the oven.
Here’s the starter kit I tell people to buy if they want to get into pizza making:
- SAF instant dry yeast
- Etekcity food scale
- Elements of Pizza Cookbook by Ken Forkish
- King Arthur Bread Flour or Tipo 00 - if you are cooking in your home oven bread flour works best, for high temp ovens you’ll get the most out of the Tipo. Both can be found at your local grocery store or Whole Foods *during non pandemic times.
