My kiddo (7yo) plays with VX Nano, it's a "laptop" wireless mouse, quite small, and his hands fit just fine. And a Ducky One TKL keyboard (it's my wifes computer, he just plays with it).
Maybe check out some cheap keyboards like Anne Pro on Aliexpress or Magicforce https://www.amazon.com/Qisan-Mechanical-Keyboard-68-Keys-Magicforce/dp/B01E8KO2B0/ref=sr_1_3?dchild=1&keywords=magicforce+keyboard&qid=1591612838&sr=8-3 they're smaller, which should give more room for the mouse on the side. Or get a TKL for a bit more normal looking keyboard.

I'd recommend the Magicforce 68 by Quisan. It has an aluminum top plate, detachable cable, 65% so it's even more compact than TLK, and built pretty well IMO for $40. But, depending on your style preferences, it does lack RGB and is kind of an apple color scheme being silver with white keys.
I have it with the brown switches (they're outemu switches) and I actually prefer them over my Corsair kb with cherry mx browns because they are slightly heavier and are a bit more tactile. There's also one with red switches if you want linear instead.

I have used this keyboard for about a year now and love it. As far as mice go my recommendation would be the G-Wolves Hati, although it's a little on the more expensive side. I would stay far far away from anything from Glorious brand. I have had nothing but bad experiences with them.

Not sure about building one although it sounds really fun! You could also just for work purposes pick up a [Magicforce 68 keyboard] (https://www.amazon.com/dp/B01E8KO2B0/ref=cm_sw_r_cp_apa_i_q0-mEbWJ4S3MP) for about $40, it's a 60% with arrow keys, delete and a few others! Just figured I'd throw that thought out there friend, wish you luck in building the pad if you go that route!

If you are on a tight budget, I would recommend the Qisan Magicforce 68.
There are different options to choose but for £30 it's very good. It comes with brown switches which might not be the best for everyone, that's why you can chose a different model. However I am not entirely certain whether the switches are hot swappable. But once again if you are on a tight budget, this one is definitely a considerable option.
Also very nice setup OP and I hope you find the KB you are looking for.

I have seen good things said about the SK61 and the MagicForce 68 (60%). However, I have seen a few comments about the stabilizers on the MF 68 being rattly. So if modding stabilizers are something you are comfortable with then the MF leaves you plenty of budget room for upgrade. Otherwise, SK61 is a good solid board.

It's a fairly decent budget mechanical keyboard. The major consideration is whether you want the clicky switches, since that keyboard uses Outemu Blues which are pretty darn loud.
Other keyboards to consider:

You could go with a bigger brand such as Corsair or Razer, they have nice white peripherals. Higher priced ones offer better build quality. But you also need to remember this is a niche hobby so things get expensive. You don't need to spend more.
