I use the Mercer Culinary Millennia Bread Knife. It was on an America's Test Kitchen video where they tested a bunch of bread knives—this one won and it was the cheapest! I love it.

This is the one I use. I love it. All my other knives are Victorinox Fibrox, but the bread knife was stupid expensive. This one does a great job. Super sharp and great for thick crusted heritage breads like this.

My brother worked for an Outback Steakhouse and it’s what they used. I also have a Henkel one that tried to cut my finger off. It’s prettier to look at but I don’t like it nearly as much.

It certainly could make a difference. Two years ago my sister wanted knives for Christmas. Nothing fancy. She said not to spend over $100 total. This is the serrated knife we got her. It’s $22. She said she likes it and it cuts well, especially for garlic bread. I asked her a couple months ago. It’s the serrated knife America’s Test Kitchen recommends based on their testing. It has something to do with the knife’s design.

A good bread knife, as already said. I have the Mercer Culinary 10" Bread Knife -its less than $20USD and is excellent.

America's Test Kitchen picked it as their recommended bread knife - the video (just search on Youtube) w/ the review has a good explanation of what to look for in a serrated knife.

Thanks for the info! I've heard that fairly cheap ($25 or so) bread knives (like this one) are about as good as the nicer stuff if you're not sharpening them yourself, and just buying a replacement every so often. Do you think it's worth getting something nicer for bread?

Just be very careful. 3 weeks ago i was putting mine back in its sheath and I sliced my finger in half lengthways through the fingernail and to the bone with almost no pressure applied. It is a dang good knife, but incredibly sharp.

I had the same issue. Have been finally making amazing open crumb, only for it to be squashed and destroyed by a very similar looking serrated knife as yourself.

Bought this very affordable, ridiculously sharp Mercer bread knife at the suggestion of Wirecutter, and I will confirm that it has changed my entire kitchen game.

So just because you're new, I'd suggest getting these knives as follows.

Bread/Serated Knife

Chef Knife

Paring Knife

Sharpening stones

I'd describe these as the absolute baseline for knives, and will only cost you about 80 dollars. You can get a knife holder for like 30 bucks and it'll work fine for these. These are all perfectly adequate, and you will never think "Damn I can't do this because my knives are shitty". You may want to get a better version of one of these knives down the road, but these will never be bad. Honing is fine, but most home cooks don't do it often enough for a honing rod to matter. Just sharpen with whetstones whenever you want a sharper knife, it'll be fine.
