FPS is mostly at 80 and sometimes drops to 40ish randomly, but I do have a lot of settings turned way down.
I can’t remember if either are red but I don’t think they are.

If you want a board with on-board wifi and blutooth, get basically any ITX motherboard. they all seem to have wifi/blutooth. this MSI B450I is the best b450 motherboard that has it. its relativley cheap, has a good power delivery system and overall pretty good specs (for the form factor and price)

RAM speed still wrong w/ XMP
Just put together a Ryzen 3600 + 3200 MHz RAM. I just noticed my speed is set to 2133 instead of close to 3200. When I switched it manually to 3200, it fails to boot and then goes into BIOS safe mode so I can revert the setting. When I enable XMP, it shows 3200 as the speed, but then it takes a minute or two to boot into Windows. After it does boot, the speeds show that it is back to 2133. It is almost as though it attempts to check multiple speeds before finding the appropriate one that lets it load Windows.

Any thoughts on what to do here?

Is this RAM compatible with this Mobo? I think the manual says it supports up to 3200, not sure if there is a fix.

The only things I'm not sure about are:
Are you really gonna overclock enough to get use out of an X570 board? Couldn't you use something like this?
Do you care about looks? If so, (completely up to you) I like the H2 series from NZXT (look on their website for the best prices), and I'd also pay the extra $5 for the Hyper 212 Black Edition. Considering you aren't overclocking, there are better looking fans then the Noctuas.
If you don't necessarily case about looks, I don't think you need that nice of a PSU, you could find a much cheaper non-modular one.
If you aren't planning to overclock, you can find cheaper fans then the Noctuas, and the stock CPU cooler might be suitable.
The Samsung SSD is a little pricey for 1TB. I would either get a smaller one or one of a different brand (this for example)
The 3700X is perfect for this price sector, (consider the 3900X if you do a lot of heavy productivity work, but neither processor will limit you.)
If you can wait for the 3000 series NVIDIA cards, I think it will be worth it. The 2080 Super is a beast anyway, though.
This is the sweet spot for PCs, regardless if you take my advice or not, hope you enjoy your PC!

I'd swap the motherboard, and the cooler.

It really depends on how much you want to spend, for around $850-950 you could build this:
Motherboard: MSI B450I Motherboard $130
RAM: 16GB RAM NewEgg $75
Graphics Card (better): RTX 2060 6GB $299
Graphics card (Slower but still a great budget option): GTX 1650 Super 4GB $160

The Velka 3 case is one of the smallest on the market so if you think that its too still to large for your needs then you might have to stick with a laptop.
In terms of a Pre-built the smallest one I could find that didn't cost the same as a small car was this: Cyberpower Syber-C Gaming PC $1375
If you have someone to help you out who knows about building computers then I would defiantly recommend building one yourself because you save a lot of money but if thats not possible and you don't feel comfortable building one on your won then that Cyber power pre-built isn't bad and will still give you pretty good performance.

Temps are 70° CPU and 62° GPU at 100% load with the CPU fan running at 1500rpm and GPU fans at 1100RPM. Even though I only bought the GPU 6 months ago, I repasted it just because and temps dropped 8° under load and 12° at idle (who knows when it was assembled, but the factory paste why dry-ish).
