Apple TV 4K Dolby Vision/HDR
Just found this subreddit and found out I wasn’t alone in my horrible experience.
If I want to watch Apple TV 4K Dolby Vision or HDR content is my only option to buy one of these down-sample splitters and run the 4K content to my TV and the 1080p downsample to a headless adapter?

I've never personally used an HDMI switch/splitter so I can't say for sure, but AFAIK they all have electronics in them so you need to make sure it supports 4K/HDR/HDCP2.2.
From a quick search this one seems to do what you need, but take a look around. You need a splitter (one input to multiple outputs) rather than a switch (multiple inputs to one output).

I think you guys are right. Sorry for assuming. I'd hate to spread misinformation.
That being said, my particular splitter does downscale. It's a 2.0 HDMI splitter that will downscale to 1080p separately.
This still doesn't help OP, as he'll need a 2.1 version of an HDMI splitter like mine. It seems that the one I posted isn't going to be capable of downscaling.

So I’m wondering, I might be wrong, but couldn’t you just use a HDMI splitter? One that duplicates the signal, like you would if streaming game footage to a gaming screen and also to a capture card? Instead of utilizing ARC or eARC you’d send the signal to both the Sonos Arc and your television. In my case Nvidia Shield output -> HDMI Splitter Input - HDMI Output 1 -> Sonos eARC / HDMI Output 2 -> TV. This would eliminate the worry about your television’s ARC status.

Port 1 is TV. Set the splitter to 4K Mode. The scaler on port 2 to ON.
You will get 4K HDR on port 1 and 1080P on port 2 for the elgato.

Not sure about the cable, but just as a heads-up, I haven't had a ton of luck with HDR with the Lightpack 2 UHD, either, and splitters even have a hard time with it (Dolby Vision in particular seems to give them the most trouble; HDR10 seems to work better, but might be a little washed out).

So far so good. Out of the box, the only issue I encountered was it wouldnt simultaneously output 4K HDR through input 1 and lossless HD audio on output 2. I have a HDMI 1.4a AVR, so im feeding output 2 through the AVR first. At first, if it was in 4K mode, it would only output non-lossless audio (DD, DTS, PCM) on output 2. I messaged the seller through Amazon, they called me and got my AVR info and 2 days later sent me a custom firmware to flash. Ever since, I now get 4K HDR through output 1, and 1080p + HD audio on output 2.
Like i said, still waiting on the grabber, but right now I have Hyperion working wirelessly with Hyperion Android Grabber on my Nvidia Shield. It all works great on non-drm content (plex, youtube). I want to get it working for DRM content now, thus the need for the grabber now.
I was also suggested this from some of the people at the Kodi forums. I have no personal experience with it, but based on the description Id imagine it should work. I got the suggestion for my splitter from a user at the Hyperion forums who had it working in their own personal setup.

I spent 30 bucks on this: https://www.amazon.com/dp/B07VP37KMB and have the dip switches set to downscale. This sits between my roku ultra and av receiver. Vudu queries the box which says “4K, ready!” but the box downscales the video for my projector but leaves DTS and Atmos intact as it passes through to the receiver.
I 100 percent agree with your sentiment but I have a number of UHD titles that were upgraded for me or were part of those mix n match deals and I’ll watch those with atmos if I don’t own the disc.

I can update this. The splitter works! Sync will drop when I change HDMI inputs but I get Sync to work with DV.
My setup is LG C7 -> splitter -> Pioneer Receiver (HDMI out) and Sync
All HDMI ports work with Sync doing this. Switch, Apple TV 4k (with DV) and PS4.

A solution may also be to use an HDMI splitter that supports Dolby Atmos. Run your source into the splitter and port one output to the projector and one for the audio. I have something similar (with optical output) for the Beam, to accomodate an older TV that doesn't support 5.1 audio output on ARC. Optical output from a TV to an AVR really should be a last resort setup.
Optical does no have HDMI 2.0 Lip Sync included in its tech either.
As a last resort this may help to direct connect Shield to the AVR for audio, and also direct to 4K HDR TV for 4K HDR video:
