I mounted it on the base of the rubber grip using zip ties. You can mount on the round metal bar itself, but you'll be blocking the folding mechanism (which may not matter to you). This is the mount I use and recommend (I also used it on my m365). Don't lose the Allen key that comes with it; it is unique.
It is a normal sized u lock that does fit over the folding area. I would recommend it as a way to secure the scooter.

These were $5.99 when I purchased, but now they have a ton of reviews and are higher priced. I’m sure you could find an identical for cheaper. I had those rubber band type holders and 2 broke while riding sending my phone flying. I use this now. I love it. It’s aluminum and works way better than the rubber kind.

I don't have the ram mount, but I did have this happen to me as well with another mount. Definitely find a mount that has some sort of vibration absorption of you mount from the handlebars. The body of the bike might not be as big a problem.
This is the mount I own. I solved the vibration issue by tossing the plastic spacer that comes with it and cutting some robber fuel line to put in it's place. The mount is solid metal, and very sturdy. Just make sure that you get everything right. I almost lost the screw that clamps it down to my phone one day when I was riding with my phone not in the mount. It almost vibrated itself out of it's threads. Lol

I'm also one of those phone guys. I do have a cateeye dumb computer mostly for the reliability as an odometer but for everything else I use my iPhone X. My HR, speed & cadance sensors work great with the Wahoo Fitness app. Plus, I'm getting a power meter next week. It's held solid by a aluminum holder plus Silicone Bands so it's super secure. With a battery case, it'll last me a full day -- way over 100 miles -- with rests.
Reading this thread though, there is a high risk of crashing and destroying the phone so yea that might be motivation to get a Wahoo element.

I did a bit of lookin around and YouTube searches for it. I loved what I saw and picked the GUB PLUS6! It works great on trails and the street!!
I haven't seen a need yet, but might get these to add to the mount. As they would add even more security!

Veloinsuace covers theft and damage. Only covers theft if you use two locks and lock it to an immovable object. I pay $14 a month, could have been cheaper but I opted in for roadside assistance.
I would highly recommend this lock. It’s heavy duty and fits around my Radrunner body and through the tire. For my second lock I use a plain basic Bell bicycle lock. I’m not too thrilled about it and I’m going to upgrade soon to a foldy lock once I get the cash. However I live in a low theft area and the one Club lock would be just fine on its own for me. I’m more concerned when I park it in the city for errands.
I would recommend this phone mount. Fits a huge array of phone sizes and is very secure on my bike going over plenty of bumps and at high speeds.

I've been using this alarm. It has an activator (like a car alarm), and it will go off indefinitely. It obviously won't stop someone from just walking off with your bike, but it will at least add attention. I like this because you can put it anywhere; not just on the frame/post. This is the lock that I lock my bike up with! It's super durable, and I like that I can fasten the holder onto the bottle-cage mount. It's super compact, and just folds out of the way. It's actually specifically designed for ebikes. We tried to use a number of tools on one and have remained unsuccessful. Warning that there appears to be a cheaper version in the 25-35 range. Not sure how they are different though. I don't ever take my battery with me, unless I'm heading to someplace where there is a place I can set things down (school - I teach, doctor's office, etc.). Most batteries lock, so I imagine that's the idea of that... and I think it takes a pretty good amount to compromise.
Unfortunately I haven't found any kind of tracker, that allows you to track it via GPS (without a subscription, which I am not for). There is a tile tracker that I had looked at, that relies on other people who have the Tile-app on their phone to allow it to be tracked. That seems like an unreliable method IMO.
This does give me a lot of keys however... but I think all of these are really helpful. Not sure a good way to secure things like Penniers. You could find a way to clamp them down, but I feel it would limit the overall function(s). I also think that replacing screws and bolts to stop someone with tools would be a bit overkill (but ebikes can be $2k+ investment so I understand). Getting Renter's Insurance is one of the best things you can do!
Not that this goes to your question, but these two items below help with personal safety while using/riding the bike:
Tail light/Turn Signal light. This thing is just really really cool. Not only does it give a nice rear light, but it doubles giving turn signals. My favorite thing about it (specifically at night) is that it shines red lights below your bike on the road around you.
