I haven't used one on a gun, but easy out screw extractors have saved me when repairing bikes.
They are self tapping reverse threaded screw that you drive into the stripped head.
Link is for an example, not because I know that is a good version. https://www.amazon.com/dp/B07GZ17QD9/ref=cm_sw_r_cp_apa_i_Ga4hFbGS7CB7K

There are drill bits made for extracting broken or rounded bolts. I bought a small set 10 years ago and have used them many times. It's a set identical to these.

A screw extractor, perhaps?
You use these with a drill:

Do you have any torq bits? Their star pattern can sometimes grab a screw like that. Otherwise grab a screw extractor off amazon.

These things are awesome. With a bit extender, you can probably get into a deep hole.

Your best shot may be to get something like this: https://www.amazon.com/Extractor-Stripped-HassleFree-Hardness-63-65hrc/dp/B07GZ17QD9 . It has one end to make or widen a hole, then the other end has a reverse twist to latch onto and screw it out.

I used left handed drill bit to drill a hole for the easy out, and used a screw extractor to pull the broken bolt. The key for me was lots of penetrating oil and patience.

I have a set like this and it essentially drills out a bit of the screw so you can flip the bit and it will grab and remove it. Super handy to have around.
Edit: Not sure if this one is small enough for that screw, but I bet there is a set for that size somewhere.

This has worked well for me. You may have to drill a small hole with a drill bit depending on how rounded the fitting is, but the bits counter thread into the stripped bolt and should unscrew out. I’ve been able to get things out as delicate as a bleed screw out of a shifter. Stem bolts should be easy unless some galvanic reaction has totally seized it in there.

How stripped and what kind of head? Sometimes you can get away with just a slightly larger size, but other wise I'd grab one of those screw extractor sets at home Depot/Lowe's

go to your local auto parts or hardware shop and buy a small extractor bit set. They are designed with a left handed drill bit thread that bites in to the head of the screw and turns it out.

if you aren't in a hurry, you can go order or buy one of these screw extrators

Won't be harder to access once you take the door down tho.. The stripped screw remover suggested above is what I would try
https://www.amazon.com/dp/B07GZ17QD9/ref=cm_sw_r_other_apa_i_ck4REbBF5GBAJ
If this doesn't work, try using a smaller flat head to find a spot that will grab.
Next cut a groove for a flathead screwdriver to remove it.
If all else fails, use a drill to get all the metal out of the hole. You can use a drill bit the same diameter as the head of the screw to drill all the way down. After the screw is gone, use a stack of toothpicks or a dowel (wooden rod) to fill it in. Make sure whatever you use has to be hit in with a hammer to go in the hole, you want it to be snug. To put the hunger back in, drywall screws work great, but make sure it's longer than the old one to make sure you don't get a loose door after using it.
Hope this helps!

You can use a metal saw blade or anything similar.
Otherwise, a striped screw remover (https://www.amazon.com/Extractor-Stripped-HassleFree-Hardness-63-65hrc/dp/B07GZ17QD9)

They make screw extractor tools that drill into the screw and bite into the damaged head enough to remove it. $11 on Amazon for a basic set. https://www.amazon.com/Extractor-Stripped-HassleFree-Hardness-63-65hrc/dp/B07GZ17QD9

There's a few routes to take, most of which run the risk of not working.
You could try an extractor bit similar to this set https://www.amazon.com/Extractor-Stripped-HassleFree-Hardness-63-65hrc/dp/B07GZ17QD9
That would be the best way.
You could use a file or grinding wheel to cut a notch in the head of the screw to allow you to use a flat head. You could also use that same technique to flatten two sides of the screw head so you could attach a set of pliers.
There's also the old "hammer a bigger screwdriver into the hole" method but that pretty much never works

There's a lot of field-expedient ways to do it, but honestly a decent tool is so much easier, and then you'll have it for next time.
$11: https://www.amazon.com/dp/B07GZ17QD9/ref=psdc_2225074011_t1_B00004YOBF
If you really want to wing it, try supergluing whatever bit fits the best. The trick is no side to side motion, that will break the bond, rotational forces only. Also don't let the glue overflow and get between the head of the screw and the scales.

Screw extractor. Drill it out and use the specialized head to get it out.

First try a thin rubber band between rounded hex bolt and Allen key.
If too thick, try a piece of latex glove. This method is better than tin foil.
If these fail try the other methods mentioned. Cutting a slot in the head with a dremel remove with straight screwdriver best. And yes as mentioned, a Torx bit beat into the rounded hole may also get u out of this situation. Lots of good help here. ; )
https://www.amazon.com/dp/B07GZ17QD9?ref=ppx_pop_mob_ap_share
If all else fails, weld a rod onto the head, twist off. ; ) but yeah... that's overkill... and best for big heavy duty bolts.

If you’re not too steady with a dremel cut off wheel, get a set of this to remove the screw with out damaging the paddle.

Someone gave a gorilla screwdriver, huh? Sorry friend! I very recently ran into this with the pesky VGA standoffs on my x220. Not sure if it's the case with x230, but those standoffs also hold the motherboard down, so a fairly simple CPU re-paste turned into a 2-day job thanks to one lousy over-tightened screw.
Best of luck! If all else fails, you can get a screw extractor like this: https://www.amazon.com/Extractor-Stripped-HassleFree-Hardness-63-65hrc/dp/B07GZ17QD9

These work pretty damn good. They have a left handed bit on one end to make a hole and a grabber on the other that fits into the drilled hole.

It seems a little stripped. There are some kits you could use with a drill to unscrew them, like this one: https://www.amazon.com/Extractor-Stripped-HassleFree-Hardness-63-65hrc/dp/B07GZ17QD9
And there are another ways with hot glue or even with an automatic screwdriver, but there's also a chance to make everything worse. It doesn't matter much, since you can remove them with the kit above, so worth a try, I guess. This video should help: https://www.youtube.com/watch?v=_mTFQbaT3Zc
